PEACH FREEZER JAM

Peach Freezer Jam is an easy, no-cook jam that captures the fresh, sweet flavor of ripe peaches. It requires minimal ingredients and time, making it a great way to enjoy peaches all year long. This jam is stored in the freezer and perfect for spreading on toast, stirring into yogurt, or as a topping for desserts.

Ingredients:

  • 4 cups ripe peaches, peeled and finely chopped (about 6-8 peaches)
  • 1½ cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 package (1.75 oz) fruit pectin for freezer jam (like Sure-Jell)
  • ¾ cup water

Instructions:

  1. Prepare the peaches:
    • Peel the peaches by blanching them in boiling water for 30 seconds, then transferring them to an ice bath to easily remove the skins. Once peeled, finely chop or mash the peaches to your desired consistency (you can leave small chunks for texture or blend for a smoother jam).
  2. Mix the peaches:
    • In a large bowl, combine the chopped peaches, sugar, and lemon juice. Stir well and let it sit for 10 minutes, stirring occasionally, to allow the sugar to dissolve into the fruit.
  3. Prepare the pectin:
    • In a small saucepan, combine the pectin and water. Bring the mixture to a boil, stirring constantly. Once boiling, let it boil for 1 minute, then remove from heat.
  4. Combine the pectin and peaches:
    • Pour the hot pectin mixture into the peach mixture and stir thoroughly for about 3 minutes, ensuring that everything is well combined.
  5. Jar the jam:
    • Ladle the peach jam into clean, freezer-safe containers, leaving about ½ inch of space at the top to allow for expansion when freezing. Wipe the rims clean and seal with lids.
  6. Let the jam set:
    • Allow the jars of peach jam to sit at room temperature for 24 hours to thicken and set.
  7. Store the jam:
    • Once set, store the jam in the freezer for up to 1 year or in the refrigerator for up to 3 weeks. Thaw in the refrigerator when you’re ready to use it.
