Ingredients:

For the Pie Crust:

  • 1 pre-made pie crust (or homemade, if preferred)

For the Peach Filling:

  • 5-6 ripe peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch

For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed

Instructions:

  1. Prepare the crust: Preheat your oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Set aside.
  2. Make the peach filling: In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and cornstarch. Gently toss until the peaches are evenly coated with the mixture. Set aside.
  3. Make the crumble topping: In a separate bowl, whisk together the flour, rolled oats, brown sugar, ground cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Assemble the pie: Pour the peach filling into the prepared pie crust, spreading it out evenly. Sprinkle the crumble topping over the peaches, covering them completely.
  5. Bake the pie: Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 45-50 minutes, or until the filling is bubbly and the crumble topping is golden brown. If the crust edges begin to brown too quickly, cover them with foil.
  6. Cool and serve: Allow the pie to cool on a wire rack for at least 2 hours before slicing. This will help the filling set. Serve warm or at room temperature, with a scoop of vanilla ice cream if desired.

Peach Crumble Pie is a delicious way to celebrate the sweetness of summer peaches. With its juicy filling and crunchy topping, this pie is sure to become a favorite dessert that’s as beautiful as it is tasty.
