Pastitsio

Pastitsio is a traditional Greek baked pasta dish, often compared to lasagna, with layers of rich, savory flavors. The bottom layer consists of tubular pasta, often mixed with a hint of cheese, topped with a flavorful ground beef (or lamb) and tomato sauce that’s seasoned with warm spices like cinnamon and cloves. A creamy, velvety béchamel sauce blankets the top, creating a golden crust when baked. Pastitsio is a hearty, comforting meal that’s perfect for family gatherings or special occasions, offering a taste of Mediterranean warmth and tradition.

Ingredients:

For the Meat Sauce:

  • 2 tbsp olive oil
  • 1 lb ground beef (or lamb)
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 (14 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • Salt and pepper, to taste
  • ¼ cup red wine (optional)
  • ½ cup water

For the Pasta:

  • 1 lb penne or ziti pasta
  • 2 tbsp butter
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten

For the Béchamel Sauce:

  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups whole milk, warmed
  • ¼ tsp ground nutmeg
  • Salt and pepper, to taste
  • 2 eggs, lightly beaten
  • ½ cup grated Parmesan cheese

Instructions:

  1. Make the Meat Sauce: Heat olive oil in a large skillet over medium heat. Add the onions and garlic, sautéing until soft. Add the ground beef or lamb and cook until browned. Stir in the diced tomatoes, tomato paste, cinnamon, cloves, salt, and pepper. Pour in the red wine (if using) and water, simmer for 20-25 minutes until the sauce thickens. Set aside.
  2. Cook the Pasta: Cook the pasta in salted boiling water according to package instructions. Drain and return to the pot. Stir in butter, ½ cup of Parmesan cheese, and beaten eggs. Set aside.
  3. Make the Béchamel Sauce: In a saucepan, melt the butter over medium heat. Add the flour and whisk to form a roux, cooking for 2 minutes without browning. Gradually whisk in the warm milk and continue stirring until thickened, about 5-7 minutes. Season with nutmeg, salt, and pepper. Remove from heat and slowly whisk in the beaten eggs and Parmesan cheese. Set aside.
  4. Assemble the Pastitsio: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish. Spread half of the pasta mixture in an even layer on the bottom of the dish. Pour the meat sauce over the pasta and spread it evenly. Top with the remaining pasta. Pour the béchamel sauce over the top, spreading it evenly with a spatula.
  5. Bake: Bake for 40-45 minutes, or until the top is golden brown. Let the Pastitsio rest for 10-15 minutes before slicing and serving.
