Parmesan Risotto

Parmesan Risotto is a classic Italian dish that’s creamy, rich, and deeply satisfying. Made with Arborio rice, this risotto is slowly cooked in broth until it reaches a perfectly creamy consistency. The addition of Parmesan cheese adds a nutty, salty flavor that elevates the dish, making it both elegant and comforting. This versatile recipe is perfect as a side dish, or it can be enjoyed on its own for a light meal. It pairs beautifully with roasted vegetables, grilled meats, or seafood, and is sure to impress at any dinner gathering.

Ingredients:

  • 1 ½ cups Arborio rice
  • 4 cups chicken or vegetable broth, warmed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • ½ cup dry white wine
  • 1 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.
  2. Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently, until the rice is lightly toasted.
  3. Pour in the white wine and cook, stirring, until the liquid is mostly absorbed.
  4. Begin adding the warm broth, one ladleful at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, until the rice is tender and creamy but still slightly al dente.
  5. Once the rice is cooked to your liking, stir in the butter and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Remove from heat and let the risotto sit for a few minutes before serving. Garnish with fresh parsley if desired.

Enjoy your Parmesan Risotto as a luxurious, comforting dish that’s perfect on its own or paired with your favorite sides!
