Ingredients:
- 1 cup basmati rice
- 200g paneer, cubed
- 2 tbsp ghee or oil
- 1 bay leaf
- 1 cinnamon stick
- 3-4 cloves
- 2-3 cardamom pods
- 1 small onion, thinly sliced
- 1 small tomato, chopped
- 1/2 cup mixed vegetables (peas, carrots, and beans)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder (optional)
- 2 cups water
- Salt to taste
- Fresh coriander leaves, for garnish
Instructions:
- Rinse the basmati rice in cold water and soak it for about 20 minutes. Drain and set aside.
- Heat 1 tablespoon of ghee or oil in a pan over medium heat and fry the paneer cubes until they are golden on all sides. Remove and set aside.
- In the same pan, add the remaining ghee or oil. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until golden brown. Add the chopped tomatoes and cook until soft.
- Stir in the mixed vegetables, turmeric powder, garam masala, and red chili powder (if using). Cook for 2-3 minutes.
- Add the soaked and drained rice to the pan and gently stir to combine with the vegetables and spices.
- Pour in the water and season with salt. Bring the mixture to a boil, then lower the heat, cover, and simmer for 15-18 minutes, or until the rice is cooked and fluffy.
- Once done, gently fold in the fried paneer cubes.
- Garnish with fresh coriander leaves and serve hot.
