Paneer Pulao

Paneer Pulao is a fragrant and flavorful rice dish that combines the richness of paneer (Indian cottage cheese) with the aromatic spices of pulao. This one-pot dish is a perfect balance of soft, golden cubes of paneer, perfectly cooked basmati rice, and a mix of vegetables and spices, making it both comforting and satisfying. Ideal for lunch or dinner, Paneer Pulao can be served as a standalone dish or paired with raita or a side of curry. It’s a great way to enjoy a wholesome and delicious Indian-inspired meal in under 30 minutes.

Ingredients:

  • 1 cup basmati rice
  • 200g paneer, cubed
  • 2 tbsp ghee or oil
  • 1 bay leaf
  • 1 cinnamon stick
  • 3-4 cloves
  • 2-3 cardamom pods
  • 1 small onion, thinly sliced
  • 1 small tomato, chopped
  • 1/2 cup mixed vegetables (peas, carrots, and beans)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (optional)
  • 2 cups water
  • Salt to taste
  • Fresh coriander leaves, for garnish

Instructions:

  1. Rinse the basmati rice in cold water and soak it for about 20 minutes. Drain and set aside.
  2. Heat 1 tablespoon of ghee or oil in a pan over medium heat and fry the paneer cubes until they are golden on all sides. Remove and set aside.
  3. In the same pan, add the remaining ghee or oil. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
  4. Add the sliced onions and sauté until golden brown. Add the chopped tomatoes and cook until soft.
  5. Stir in the mixed vegetables, turmeric powder, garam masala, and red chili powder (if using). Cook for 2-3 minutes.
  6. Add the soaked and drained rice to the pan and gently stir to combine with the vegetables and spices.
  7. Pour in the water and season with salt. Bring the mixture to a boil, then lower the heat, cover, and simmer for 15-18 minutes, or until the rice is cooked and fluffy.
  8. Once done, gently fold in the fried paneer cubes.
  9. Garnish with fresh coriander leaves and serve hot.
