Oven-Roasted Tomatoes are a simple yet flavorful dish that enhances the natural sweetness and richness of ripe tomatoes. Slowly roasted in the oven with olive oil, garlic, and fresh herbs, these tomatoes develop an intense, concentrated flavor with a slightly caramelized edge. They can be used in a variety of dishes, from pasta and salads to sandwiches and bruschetta, or enjoyed on their own as a tasty side dish. Oven-roasting brings out the best in tomatoes, making them a versatile ingredient that adds depth and warmth to your cooking.
Ingredients:
- 1 1/2 pounds ripe tomatoes (Roma, cherry, or any variety you prefer)
- 3 tablespoons olive oil
- 3 cloves garlic, thinly sliced
- 1 teaspoon dried oregano or 1 tablespoon fresh oregano, chopped
- Salt and pepper, to taste
- 1 tablespoon balsamic vinegar (optional)
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the Tomatoes: Wash the tomatoes and slice them in half (or quarters if they are large). If using cherry tomatoes, you can leave them whole or halve them. Place the tomatoes in a large bowl.
- Season the Tomatoes: Drizzle the olive oil over the tomatoes, then add the sliced garlic, oregano, salt, and pepper. Toss everything together until the tomatoes are evenly coated with the oil and seasonings.
- Roast the Tomatoes: Arrange the tomatoes in a single layer on the prepared baking sheet, cut side up if halved. Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft, slightly shriveled, and caramelized around the edges. If you like, drizzle the balsamic vinegar over the tomatoes halfway through roasting for added sweetness and depth.
- Serve: Once roasted, remove the tomatoes from the oven and let them cool slightly. Garnish with fresh basil or parsley if desired. Serve the oven-roasted tomatoes warm or at room temperature.
Oven-Roasted Tomatoes can be stored in an airtight container in the refrigerator for up to a week. They’re perfect for adding a burst of flavor to any dish and can easily be reheated or enjoyed cold.
