Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 large egg + 1 egg yolk
- 2 cups semisweet chocolate chips
- 24 Oreo cookies
Instructions:
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, mix the melted butter, brown sugar, and granulated sugar until well combined. Stir in the vanilla extract, egg, and egg yolk until smooth and creamy.
- Gradually add the dry ingredients into the wet ingredients, mixing just until combined. Stir in the chocolate chips.
- Take a scoop of cookie dough (about 1 1/2 tablespoons) and flatten it slightly in your hand. Place an Oreo cookie on top, then take another scoop of dough and flatten it over the Oreo. Pinch the edges of the dough together, making sure the Oreo is completely encased.
- Place the stuffed cookies on the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 12-15 minutes or until the edges are golden brown and the centers are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
