Orange and Almond Cake is a moist and fragrant dessert that’s naturally gluten-free, made with whole oranges and almond flour. Ingredients:

  • 2 large oranges (preferably organic)
  • 6 large eggs
  • 1 ¼ cups granulated sugar
  • 2 ½ cups almond flour (ground almonds)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting, optional)

Instructions:

  1. Place the whole oranges (with peel) in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the oranges are very soft. Drain and let them cool.
  2. Preheat your oven to 350°F (175°C) and grease an 8-inch springform pan.
  3. Once the oranges are cool, cut them into quarters, remove any seeds, and blend the oranges (with peel) in a food processor until smooth.
  4. In a large bowl, whisk together the eggs and sugar until light and frothy. Stir in the orange puree, almond flour, baking powder, and vanilla extract until well combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool completely in the pan before removing. Dust with powdered sugar before serving, if desired.
