Ingredients:

For the Oatmeal Layer:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1 cup brown sugar, packed
  • 3/4 cup unsalted butter, melted
  • 1 tsp baking soda
  • 1/4 tsp salt

For the Fudge Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 1 1/2 cups semisweet chocolate chips
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, combine the flour, oats, brown sugar, baking soda, and salt. Stir in the melted butter until the mixture forms a crumbly dough.
  3. Press about two-thirds of the oatmeal mixture into the bottom of the prepared baking pan, pressing firmly to create an even layer.
  4. In a small saucepan over low heat, combine the sweetened condensed milk, chocolate chips, butter, and a pinch of salt. Stir continuously until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.
  5. Pour the fudge mixture evenly over the oatmeal layer.
  6. Crumble the remaining oatmeal mixture over the fudge layer, gently pressing it down.
  7. Bake for 25-30 minutes, or until the top is golden brown and the edges are set.
  8. Allow the bars to cool completely in the pan before slicing into squares.
