Ingredients:

  • 16 large white or cremini mushrooms, stems removed and reserved
  • 1/2 cup finely chopped walnuts or pecans
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter, melted
  • Optional: a squeeze of fresh lemon juice for a touch of brightness

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Mushroom Caps: Clean the mushroom caps with a damp cloth and place them on the prepared baking sheet, stem-side up. Finely chop the reserved mushroom stems.
