Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs

For the cheesecake:

  • 4 (8-ounce) packages of cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 3 large eggs
  • ½ cup heavy cream

Instructions

  1. Prepare the crust:
    • Preheat the oven to 325°F (163°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture into the bottom of a 9-inch springform pan, pressing it firmly and evenly.
    • Bake for 10 minutes. Remove from the oven and let cool while you prepare the filling.
  2. Make the filling:
    • In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and fluffy.
    • Gradually add the sugar and vanilla extract, mixing until well combined.
    • Add the sour cream and heavy cream, and mix until smooth.
    • Add the eggs one at a time, beating on low speed until just incorporated. Do not overmix to avoid cracking.
  3. Assemble and bake:
    • Pour the cream cheese filling over the cooled crust, smoothing the top with a spatula.
    • Place the springform pan on a baking sheet and bake for 60-70 minutes, or until the edges are set and the center jiggles slightly when shaken.
    • Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  4. Chill:
    • Remove the cheesecake from the oven and let it cool completely at room temperature.
    • Cover and refrigerate for at least 4 hours, preferably overnight.
  5. Serve:
    • Run a knife around the edges of the cheesecake to loosen it from the pan before removing the sides of the springform.
    • Slice and serve as is, or with your favorite toppings.
