Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup roasted green chiles, chopped (mild or hot, depending on your preference)

  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup tomato sauce
  • 1/4 cup ketchup
  • 2 eggs, lightly beaten
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/4 cup chopped fresh cilantro (optional)

For the Glaze:

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Prepare the meatloaf mixture: In a large mixing bowl, combine the ground beef, ground pork, chopped green chiles, onion, garlic, breadcrumbs, milk, tomato sauce, ketchup, eggs, cumin, oregano, smoked paprika, salt, pepper, Worcestershire sauce, and cilantro (if using).
