Nectarine Tart is a delightful dessert that showcases the sweet, juicy flavors of ripe nectarines atop a buttery, flaky crust. This tart is perfect for highlighting fresh seasonal fruit, with a hint of almond or vanilla complementing the nectarines’ natural sweetness. It’s an elegant yet simple dessert that can be served warm or cold, making it an ideal choice for brunches, summer gatherings, or as a light, fruity end to a meal. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent touch.

Ingredients:

For the Crust:

  • 1 ½ cups gluten-free all-purpose flour (or regular flour)
  • 2 tbsp sugar
  • ½ tsp salt
  • ½ cup cold butter, cubed
  • 1 egg yolk
  • 2-3 tbsp cold water

For the Filling:

  • 4-5 ripe nectarines, thinly sliced
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract or almond extract
  • 2 tbsp apricot jam (for glazing)

Instructions:

  1. Prepare the crust: In a food processor, combine the flour, sugar, and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs. Add the egg yolk and 2 tablespoons of cold water, pulsing until the dough begins to come together. If needed, add an additional tablespoon of water. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the oven: Preheat your oven to 375°F (190°C) and lightly grease a tart pan.
  3. Roll out the dough: On a lightly floured surface, roll out the chilled dough into a circle slightly larger than your tart pan. Transfer the dough to the pan, pressing it into the edges and trimming any excess. Prick the bottom of the dough with a fork.
  4. Prepare the nectarines: In a large bowl, gently toss the sliced nectarines with the sugar, lemon juice, and vanilla (or almond) extract.
  5. Assemble the tart: Arrange the nectarine slices in a circular pattern over the crust, overlapping them slightly.
  6. Bake: Bake the tart for 30-35 minutes, or until the crust is golden and the nectarines are tender.
  7. Glaze the tart: In a small saucepan, warm the apricot jam with a tablespoon of water until it’s smooth and runny. Brush the glaze over the nectarines while the tart is still warm.
  8. Serve: Let the tart cool slightly before serving. Optionally, serve with whipped cream or ice cream.

Enjoy this fresh, fruity Nectarine Tart as a perfect dessert for any occasion!
