Mushroom Wild Rice

Mushroom Wild Rice is a hearty and flavorful dish that brings together the earthiness of wild rice with the rich, savory flavors of sautéed mushrooms. This dish is perfect as a side for poultry or meat, or even as a vegetarian main course. The nutty texture of the wild rice complements the tender mushrooms, and a blend of herbs adds an aromatic depth that makes this dish incredibly satisfying. It’s a wholesome and rustic dish that’s both comforting and nutritious, making it ideal for a cozy dinner or a special occasion.

Ingredients:

  • 1 cup wild rice
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz. cremini or button mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • ¼ cup grated Parmesan cheese (optional)

Instructions:

  1. Cook the Wild Rice: Rinse the wild rice under cold water. In a medium saucepan, bring the broth to a boil. Add the wild rice, reduce the heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and has absorbed most of the liquid. Fluff with a fork and set aside.
  2. Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.
  3. Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 7-10 minutes. Stir occasionally to ensure even cooking.
  4. Season the Dish: Stir in the thyme, rosemary, salt, and pepper. Cook for another 2 minutes to let the flavors meld together.
  5. Combine and Serve: Add the cooked wild rice to the skillet with the mushrooms and stir to combine. Cook for a few more minutes to ensure everything is heated through. Adjust seasoning to taste.
  6. Optional Garnishes: If desired, sprinkle with fresh parsley and grated Parmesan cheese before serving.

Enjoy your Mushroom Wild Rice as a delicious, rustic addition to any meal!
