Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil, divided
- 1 tbsp butter
- 1 cup mushrooms, finely chopped (e.g., cremini or button)
- 2 cloves garlic, minced
- 1/4 cup onion, finely chopped
- 1/4 cup grated Parmesan cheese
- 2 tbsp breadcrumbs
- 1 tsp dried thyme (or 1 tbsp fresh thyme)
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/4 cup heavy cream (optional, for sauce)
Instructions
- Prepare the Mushroom Filling:
- Heat 1 tablespoon of olive oil and the butter in a skillet over medium heat. Add the mushrooms, garlic, and onion, and sauté until softened, about 5 minutes.
- Stir in the Parmesan cheese, breadcrumbs, and thyme. Season with salt and pepper to taste. Remove from heat and set aside.
- Prepare the Chicken:
- Preheat the oven to 375°F (190°C). Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
- Stuff each pocket with the mushroom filling and secure with toothpicks if necessary.
- Sear the Chicken:
- Heat the remaining olive oil in an ovenproof skillet over medium-high heat. Season the outside of the chicken breasts with salt and pepper. Sear the chicken for 2-3 minutes on each side until golden brown.
- Bake the Chicken:
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
- Optional Sauce:
- Remove the chicken from the skillet and set aside. Place the skillet back on the stovetop over medium heat. Add chicken broth and heavy cream, scraping up any browned bits. Simmer for 3-4 minutes until slightly thickened, then drizzle over the chicken.
- Serve:
- Remove toothpicks (if used) and serve the stuffed chicken breasts with your favorite sides.
