Muesli Bread

Ingredients

  • 1/4 cup honey or maple syrup
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 tsp salt
  • 1 cup warm water
  • 1/2 cup warm milk
  • 2 tbsp olive oil

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, honey (or maple syrup), and yeast. Stir gently and let it sit for 5-10 minutes until the mixture becomes frothy, indicating the yeast is activated.
  2. Mix the dry ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, sunflower seeds, chopped almonds, dried cranberries (or raisins), and salt.
  3. Combine wet and dry ingredients: Add the yeast mixture, warm milk, and olive oil to the dry ingredients. Stir until the dough comes together, then transfer it to a lightly floured surface.
  4. Knead the dough: Knead the dough for about 8-10 minutes, until it becomes smooth and elastic. If the dough is too sticky, add a bit more flour as needed.
  5. Let the dough rise: Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 to 1 1/2 hours, or until it has doubled in size.
  6. Shape and second rise: Punch down the dough and shape it into a loaf. Place it in a greased loaf pan, cover it again, and let it rise for another 30-45 minutes until it has risen slightly above the rim of the pan.
  7. Bake the bread: Preheat the oven to 375°F (190°C). Bake the muesli bread for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
