Ingredients

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt

For the Filling:

  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract

For the Meringue Topping:

  • 3 large egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Make the Crust: In a mixing bowl, cream together the softened butter and 1/2 cup of granulated sugar until light and fluffy. Add the flour and salt, mixing until just combined. Press the mixture into the bottom of the prepared baking pan to form an even layer. Bake for 15 minutes, then remove from the oven and let cool slightly.
  3. Prepare the Filling: In a saucepan over low heat, melt the chocolate chips, stirring until smooth. Remove from heat and let cool slightly. In a separate bowl, whisk together the eggs, 1 cup of sugar, cocoa powder, and vanilla extract. Gradually stir in the melted chocolate mixture until well combined. Fold in the mini marshmallows.
  4. Assemble the Bars: Pour the filling over the pre-baked crust, spreading it evenly. Bake for an additional 20-25 minutes, or until the filling is set and slightly puffed.
  5. Make the Meringue: While the bars are baking, prepare the meringue. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add 1/2 cup of sugar, continuing to beat until stiff peaks form and the mixture is glossy. Stir in the vanilla extract.
  6. Top and Bake Again: Once the bars are done baking, remove them from the oven and spread the meringue evenly over the top. Return to the oven for another 10-15 minutes, or until the meringue is lightly golden.
  7. Cool and Cut: Allow the bars to cool completely in the pan before cutting them into squares.

Enjoy the delightful layers of chocolate, marshmallow, and meringue in these irresistible Mud Hen Bars—perfect for any occasion!
