Moroccan Potato Salad

This Moroccan-inspired potato salad is a vibrant and flavorful twist on the classic version. Packed with aromatic spices, fresh herbs, and zesty citrus, it delivers a perfect balance of earthiness and brightness. Unlike traditional potato salads laden with mayonnaise, this dish is dressed with a light and tangy olive oil-based vinaigrette infused with Moroccan spices like cumin and paprika. The addition of olives, preserved lemon, and fresh parsley gives it an authentic North African flair. Perfect as a side dish for grilled meats or as a stand-alone vegetarian delight, this salad is best served warm or at room temperature, allowing the flavors to fully meld.


Ingredients:

  • 2 pounds (900g) small red or yellow potatoes, scrubbed and halved
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon finely chopped preserved lemon (optional)
  • â…“ cup green or black olives, sliced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions:

  1. Cook the Potatoes:
    • Place the halved potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
    • Bring the water to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 10-12 minutes. Drain and let cool slightly.
  2. Prepare the Dressing:
    • In a small skillet, heat 2 tablespoons of olive oil over medium heat.
    • Add the cumin, smoked paprika, turmeric, and coriander, stirring until fragrant, about 30 seconds. Remove from heat and let cool slightly.
    • In a mixing bowl, combine the spiced oil with minced garlic, lemon juice, preserved lemon (if using), and the remaining tablespoon of olive oil. Whisk well to emulsify.
  3. Assemble the Salad:
    • In a large bowl, toss the warm potatoes with the dressing, ensuring all pieces are coated evenly.
    • Add the olives, parsley, and cilantro, tossing gently to combine.
  4. Season and Serve:
    • Taste and adjust with salt, pepper, or more lemon juice as needed.
    • Serve warm or at room temperature for the best flavor.
