Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup pure maple syrup
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup rolled oats (optional, for topping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon until well combined.
  3. Prepare the Wet Ingredients: In another bowl, whisk together the melted butter, maple syrup, buttermilk, eggs, and vanilla extract until smooth.
  4. Combine the Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter. If using, fold in the chopped nuts.
  5. Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. If desired, sprinkle rolled oats on top of each muffin for a rustic finish.
  6. Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden.
  7. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Morning Maple Muffins are delicious on their own, but they also pair wonderfully with a pat of butter or a drizzle of extra maple syrup. These muffins are a great make-ahead option, staying fresh for days and making your mornings a little sweeter and more enjoyable.
