Moo Shu Chicken

Moo Shu Chicken is a flavorful Chinese-American dish that combines tender strips of chicken with crisp vegetables and a savory hoisin sauce, all wrapped in thin, soft pancakes. Ingredients:

  • For the Chicken:
    • 1 lb boneless, skinless chicken breasts, thinly sliced
    • 2 tablespoons soy sauce
    • 1 tablespoon cornstarch
    • 1 tablespoon vegetable oil
  • For the Stir Fry:
    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 tablespoon fresh ginger, grated
    • 1/2 cup shiitake or button mushrooms, sliced
    • 1 cup Napa cabbage, thinly sliced
    • 1 cup bean sprouts
    • 1 carrot, julienned
    • 2 green onions, sliced
    • 2 tablespoons hoisin sauce
    • 2 tablespoons soy sauce
    • 1 tablespoon rice vinegar
    • 1 teaspoon sesame oil
  • For Serving:
    • 8-10 Mandarin pancakes or small flour tortillas
    • Additional hoisin sauce for spreading
    • Sliced green onions (for garnish)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the sliced chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes.
  2. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through and slightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Prepare the Stir Fry:
    • In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
    • Add the sliced mushrooms and cook for 2-3 minutes until they start to soften.
    • Stir in the cabbage, bean sprouts, carrot, and green onions. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  4. Combine and Flavor:
    • Return the cooked chicken to the skillet. Add the hoisin sauce, soy sauce, rice vinegar, and sesame oil. Stir well to combine all the ingredients and heat through, about 2 minutes.
  5. Serve:
    • Warm the Mandarin pancakes or tortillas according to package instructions.
    • Spread a small amount of hoisin sauce on each pancake, then top with a portion of the Moo Shu Chicken mixture.
    • Garnish with additional sliced green onions if desired, and roll up the pancake to eat.
