Mixed Berry Galette

A Mixed Berry Galette is a rustic, free-form tart that showcases the sweet and tangy flavors of fresh berries wrapped in a buttery, flaky crust. This simple yet elegant dessert combines strawberries, blueberries, raspberries, and blackberries for a burst of fruity goodness with every bite. The galette is easy to make, with no need for a pie pan, and the exposed edges of the crust add a beautiful golden crispness. Perfect for a casual summer gathering or an afternoon treat, this galette can be served warm with a scoop of vanilla ice cream or whipped cream for an irresistible finish.

Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3-4 tbsp ice water

For the filling:

  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

For assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

  1. Make the crust: In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter and use a pastry cutter or your fingers to blend it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Shape the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the filling: In a medium bowl, gently toss the mixed berries with the sugar, cornstarch, lemon juice, and lemon zest. Set aside.
  3. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out the dough: On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
  5. Assemble the galette: Spoon the berry mixture into the center of the dough, leaving about a 2-inch border around the edges. Fold the edges of the dough over the berries, pleating as you go to create a rustic border.
  6. Brush with egg wash: Brush the edges of the crust with the beaten egg and sprinkle with coarse sugar, if desired.
  7. Bake: Bake the galette for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Cool and serve: Let the galette cool for 10-15 minutes before slicing. Serve warm, optionally topped with vanilla ice cream or whipped cream.

This Mixed Berry Galette is a delightful dessert that combines a buttery, flaky crust with the natural sweetness of berries, making it an easy yet elegant treat for any occasion!
