Mirliton

Mirliton, also known as chayote squash, is a beloved ingredient in Cajun and Creole cuisine, especially in Louisiana. This mild-flavored, pear-shaped vegetable is often used in casseroles and stuffing, absorbing the rich flavors of herbs, spices, and seafood. Mirliton pairs beautifully with shrimp, sausage, and aromatic seasonings, creating a comforting dish that’s perfect for gatherings or holidays. The following recipe combines tender mirliton with shrimp and Creole seasoning to deliver a savory and satisfying meal that’s sure to be a hit.

Ingredients:

  • 4 mirlitons (chayote squash), peeled, halved, and seeds removed
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 bell pepper, chopped
  • 2 celery stalks, chopped
  • 1/2 teaspoon Creole seasoning
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C). In a large pot, bring water to a boil. Add the mirlitons and boil for 15-20 minutes, or until they are tender. Drain and let them cool slightly.
  2. Once the mirlitons are cool enough to handle, scoop out the flesh, chop it, and set it aside, leaving the shells intact for stuffing.
  3. Heat olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, and celery. Sauté until softened, about 5-7 minutes.
  4. Stir in the shrimp and cook until pink, about 3-4 minutes. Add the chopped mirliton flesh, Creole seasoning, thyme, paprika, salt, and pepper. Cook for another 3-4 minutes, stirring occasionally.
  5. Remove from heat and stir in half of the breadcrumbs and Parmesan cheese. Mix well.
  6. Stuff the mirliton shells with the shrimp mixture and place them in a baking dish.
  7. Sprinkle the remaining breadcrumbs and Parmesan on top of the stuffed mirlitons. Bake for 20-25 minutes, or until the tops are golden and crispy.
  8. Garnish with fresh parsley and serve hot.
