Easy to make and effortlessly elegant, mini cheesecakes are ideal for parties, holidays, or a sweet dessert after dinner. Their individual servings make them as convenient as they are delicious, ensuring everyone gets their own decadent treat.

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp all-purpose flour

Toppings (optional):

  • Fresh berries
  • Whipped cream
  • Chocolate sauce
  • Caramel drizzle

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (163°C). Line a standard 12-cup muffin tin with cupcake liners.
  2. Make the Crust: In a small bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press about 1 tablespoon of the mixture firmly into the bottom of each cupcake liner to form a crust. Bake for 5 minutes, then set aside to cool.
  3. Prepare the Cheesecake Filling: In a large bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and flour until just combined.
  4. Fill the Cups: Spoon the cheesecake mixture evenly into the prepared crusts, filling each liner almost to the top.
  5. Bake the Cheesecakes: Bake in the preheated oven for 15-18 minutes, or until the centers are set but still slightly jiggly. Turn off the oven and let the cheesecakes cool inside with the door slightly ajar for 10 minutes. Then transfer to a wire rack to cool completely.
  6. Chill: Refrigerate the mini cheesecakes for at least 2 hours, or overnight, to allow them to set fully.
  7. Add Toppings: Just before serving, top each cheesecake with your desired toppings such as fresh berries, whipped cream, or a drizzle of chocolate or caramel.
  8. Serve and Enjoy: Remove the cheesecakes from the liners and serve chilled. These creamy, delightful treats are sure to be a hit!

Mini Cheesecakes are not only easy to make but also endlessly customizable, making them a go-to dessert for any occasion!
