MINI APPLES PIES

Mini Apple Pies are a delightful, handheld version of the classic apple pie—perfect for parties, gatherings, or a cozy dessert. With a buttery, flaky crust and a warm spiced apple filling, these mini pies offer all the flavors of a traditional apple pie in a fun, individual-sized treat. Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 tsp salt
  • 3-4 tbsp ice water

For the Filling:

  • 3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp all-purpose flour
  • 1 tsp lemon juice

For Topping:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp granulated sugar
  • 1/2 tsp cinnamon

Instructions

  1. Prepare the Dough: In a large bowl, mix the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough just comes together. Form it into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Prepare the Filling: In a medium bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Stir well to coat the apples.
  3. Roll and Cut the Dough: Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin. Roll out the chilled dough on a floured surface to about 1/8-inch thick. Cut out 3-4 inch circles (a round cookie cutter works well) and press each circle into the muffin tin cups.
  4. Fill the Mini Pies: Spoon the apple mixture evenly into each dough-lined muffin cup, filling to just below the top.
  5. Top and Bake: Brush the edges of the pies with beaten egg. In a small bowl, mix the granulated sugar and cinnamon, then sprinkle over the top of each mini pie. Bake for 20-25 minutes, or until the crust is golden and the filling is bubbly.
  6. Cool and Serve: Let the mini pies cool in the tin for a few minutes, then use a knife to gently lift them out onto a cooling rack. Serve warm or at room temperature.
