Ingredients:
- 12 oz spaghetti
- 1 lb ground beef or ground turkey
- 1 medium onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (4 oz) can diced green chilies
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar or Mexican cheese blend
- Fresh cilantro, chopped (for garnish)
- 2 tbsp olive oil
- Lime wedges, for serving (optional)
Instructions:
- Cook the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Cook the ground beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat and set the beef aside.
- Sauté vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onions, bell pepper, and garlic until softened, about 5 minutes.
- Add seasonings and tomatoes: Stir in the cumin, chili powder, paprika, and a pinch of salt and pepper. Add the diced tomatoes, tomato sauce, and diced green chilies. Stir everything together and let it simmer for 5-7 minutes until the sauce thickens slightly.
- Combine with spaghetti: Add the cooked ground beef back into the skillet, then stir in the cooked spaghetti. Mix well until the spaghetti is fully coated with the sauce.
- Top with cheese: Sprinkle the shredded cheese evenly over the spaghetti. Cover the skillet with a lid and let it cook for 2-3 minutes until the cheese melts.
- Garnish and serve: Garnish with fresh cilantro and serve with lime wedges on the side for a bright, tangy finish.
Mexican Spaghetti is best enjoyed warm, with a side of tortillas or chips to scoop up the saucy goodness!
