Mexican Pork Chops

Ingredients:

  • 4 bone-in or boneless pork chops
  • 2 tbsp olive oil

  • Salt and pepper, to taste
  • Juice of 1 lime
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • ½ cup chicken broth
  • 1 tsp oregano
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. Marinate the pork chops: In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice. Rub this mixture all over the pork chops and let them marinate for at least 30 minutes, or up to 2 hours for deeper flavor.

  4. Simmer the pork chops: Return the seared pork chops to the skillet, nestling them into the tomato sauce. Cover and simmer on low heat for 15–20 minutes, or until the pork chops are cooked through and tender.
  5. Serve: Garnish with fresh cilantro and lime wedges. Serve the pork chops with the tomato sauce over rice, beans, or vegetables.
