Mexican Ceviche

Mexican ceviche is a refreshing, zesty seafood dish that embodies the vibrant flavors of coastal Mexico. Made with fresh fish or shrimp, this dish is “cooked” by marinating the seafood in lime juice, which gives it a tangy and citrusy punch. Mixed with tomatoes, onions, cilantro, and jalapeños, and topped off with a touch of avocado, it’s a light yet flavorful meal that’s perfect for warm weather. This ceviche is commonly enjoyed as an appetizer or a light meal, served with crispy tortilla chips or tostadas, making it a festive and healthy option for gatherings or casual meals alike.

Ingredients:

  • 1 lb fresh fish fillets (such as tilapia, snapper, or sea bass) or shrimp, cut into small cubes
  • 1 cup fresh lime juice (about 8–10 limes)
  • 1/2 red onion, finely chopped
  • 1 medium tomato, diced
  • 1 jalapeño, seeds removed and finely chopped (optional, for heat)
  • 1/4 cup fresh cilantro, chopped
  • 1 small cucumber, peeled and diced
  • 1/4 cup olive oil (optional)
  • Salt and pepper to taste
  • 1 avocado, diced
  • Tortilla chips or tostadas for serving

Instructions:

  1. Marinate the seafood: Place the fish or shrimp in a large glass bowl. Pour the fresh lime juice over the seafood, making sure it is completely submerged. Cover the bowl and refrigerate for 1–2 hours, or until the fish becomes opaque and firm (the acidity of the lime juice will “cook” the seafood).
  2. Prepare the vegetables: While the seafood is marinating, finely chop the onion, tomato, jalapeño, cucumber, and cilantro. Set them aside.
  3. Combine ingredients: Once the seafood is ready, drain about half of the lime juice from the bowl. Add the chopped vegetables and cilantro to the seafood. If using olive oil, drizzle it over the mixture. Stir everything gently to combine.
  4. Season and garnish: Season the ceviche with salt and pepper to taste. Gently fold in the diced avocado just before serving.
  5. Serve: Serve the ceviche chilled with tortilla chips or on top of crispy tostadas for a deliciously refreshing meal or snack.
