Mexican Bread Pudding

Mexican Bread Pudding, known as Capirotada, is a traditional dessert that’s both comforting and rich in history. Typically enjoyed during Lent, this dessert combines layers of toasted bread, raisins, nuts, and cheese, all soaked in a spiced syrup made from piloncillo (unrefined cane sugar), cinnamon, and cloves. The result is a unique blend of sweet and savory flavors, with a soft, pudding-like texture that’s truly satisfying. Each bite of Capirotada is a delightful mix of warmth and sweetness, making it a perfect dessert for any occasion.

Ingredients:

  • 1 loaf of bolillo or French bread, sliced and toasted
  • 1 1/2 cups piloncillo or dark brown sugar
  • 2 cups water
  • 2 cinnamon sticks
  • 3 whole cloves
  • 1/2 cup raisins
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup shredded cheese (such as Monterey Jack or queso fresco)
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • Optional toppings: coconut flakes, sliced almonds, or fresh fruit

Instructions:

  1. Prepare the Syrup: In a medium saucepan, combine the water, piloncillo (or brown sugar), cinnamon sticks, and cloves. Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the syrup thickens slightly. Remove from heat and stir in the vanilla extract. Discard the cinnamon sticks and cloves.
  2. Toast the Bread: Preheat your oven to 350°F (175°C). Place the bread slices on a baking sheet and toast them in the oven until they are golden and crispy, about 10 minutes. You can also do this step in a toaster if preferred.
  3. Assemble the Bread Pudding: In a greased baking dish, layer half of the toasted bread slices. Sprinkle half of the raisins, nuts, and cheese over the bread. Drizzle with half of the melted butter and pour half of the syrup over the top. Repeat the layers with the remaining bread, raisins, nuts, cheese, butter, and syrup.
  4. Bake: Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is golden and the pudding is bubbling.
  5. Serve: Let the Capirotada cool slightly before serving. It can be enjoyed warm or at room temperature. Garnish with optional toppings like coconut flakes, sliced almonds, or fresh fruit for extra flavor and texture.
