Mexican Beef Stew

This hearty Mexican Beef Stew, known as Caldo de Res in Spanish, is a warm and comforting dish that is perfect for cooler weather or whenever you’re in the mood for a flavorful, filling meal. The stew is made with tender beef chunks, simmered slowly with vegetables like carrots, potatoes, zucchini, and corn, all infused with the rich, robust flavors of tomatoes, garlic, and cumin. The addition of fresh cilantro and a squeeze of lime juice before serving brightens the dish, adding a fresh and vibrant finish. This stew is traditionally served with warm tortillas on the side, making it a complete and satisfying meal that brings the taste of Mexico right to your table.

Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 2 large tomatoes, chopped
  • 2 large carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 1 zucchini, sliced
  • 2 ears of corn, cut into 3-inch pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Warm tortillas, for serving

Instructions:

  1. Brown the Beef: Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. Cook the Aromatics: In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Simmer the Stew: Return the beef to the pot and add the beef broth, water, chopped tomatoes, cumin, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  4. Add the Vegetables: Add the sliced carrots and potatoes to the pot and simmer for another 20 minutes. Then, add the zucchini and corn, and cook for an additional 10-15 minutes, until all the vegetables are tender.
  5. Finish and Serve: Stir in the chopped cilantro just before serving. Ladle the stew into bowls, and serve with lime wedges and warm tortillas on the side.
