MERLOT FILET MIGNON

Ingredients:

  • 2 cloves garlic, minced

  • 1/2 cup Merlot (or another dry red wine)
  • 1/2 cup beef broth
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 tablespoon cold butter (to finish the sauce)

Instructions:

  1. Prepare the steaks: Pat the filet mignon steaks dry with paper towels, then season generously with salt and pepper on both sides.
  2. Sear the steaks: Heat the olive oil and 1 tablespoon of butter in a cast-iron skillet or heavy pan over medium-high heat. Once hot, add the filet mignon steaks and sear for 3-4 minutes on each side, until a golden-brown crust forms. For medium-rare, the internal temperature should reach 130°F (54°C). Adjust the cooking time to your preferred doneness. Remove the steaks from the pan and let them rest on a plate.
  3. Make the Merlot sauce: In the same skillet, lower the heat to medium and add the minced garlic and chopped shallots. Sauté for 1-2 minutes until softened. Pour in the Merlot wine and beef broth, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Stir in the thyme and let the sauce simmer for 5-6 minutes until reduced by half.
  4. Finish the sauce: Remove the skillet from the heat and stir in 1 tablespoon of cold butter to thicken the sauce and give it a silky texture.
  5. Serve: Plate the filet mignon and spoon the Merlot sauce over the top. Serve with your favorite sides such as roasted vegetables or mashed potatoes.
