Mediterranean Chickpea Salad

Mediterranean Chickpea Salad is a vibrant, nutritious dish that’s packed with fresh flavors and wholesome ingredients. Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved

  • 1 red bell pepper, diced
  • ¼ red onion, finely chopped
  • ¼ cup Kalamata olives, pitted and halved
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt, and pepper to make the dressing.
  3. Pour the dressing over the chickpea mixture and toss gently to combine.
  4. Add the crumbled feta cheese and give the salad one more gentle toss to incorporate the cheese without breaking it up too much.
  5. Taste and adjust seasoning if needed.
