Meatless Meatballs

Looking for a plant-based alternative to classic meatballs that’s as satisfying and flavorful? These meatless meatballs are a delicious, protein-packed option for vegetarians and anyone looking to enjoy a lighter meal. Made with hearty ingredients like lentils, oats, and spices, these meatballs are perfect for serving with pasta, adding to a sub sandwich, or dipping in marinara sauce. They’re baked instead of fried, making them healthier while still maintaining a crispy exterior. Whether you’re meal prepping for the week or whipping up a quick dinner, these meatless meatballs are a crowd-pleaser.

Ingredients:

  • 1 cup cooked lentils (green or brown, well-drained)
  • 1/2 cup rolled oats
  • 1/4 cup breadcrumbs (use gluten-free if desired)
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1/4 cup finely chopped fresh parsley
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg (or flax egg for vegan: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the mixture: In a food processor, combine the lentils, oats, breadcrumbs, Parmesan (or nutritional yeast), parsley, garlic, onion, soy sauce, Italian seasoning, smoked paprika, salt, and pepper. Pulse until the mixture holds together but still has some texture. Add the egg (or flax egg) and pulse a few more times to combine.
  3. Shape the meatballs: Using your hands, scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the meatballs on the prepared baking sheet.
  4. Bake the meatballs: Bake for 20-25 minutes, turning them halfway through, until they are golden brown and firm to the touch.
  5. Serve and enjoy: Remove the meatballs from the oven and let them cool slightly. Serve with marinara sauce over spaghetti, in a sub sandwich, or as an appetizer with your favorite dipping sauce.

These meatless meatballs are freezer-friendly! Simply freeze them after baking, then reheat in the oven or a simmering sauce for a quick and easy meal.
