Ingredients:

  • 1 lb mushrooms (white button or cremini), cleaned and sliced
  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil or oregano, chopped
  • Salt and pepper, to taste
  • ¼ cup red onion, thinly sliced (optional)

Instructions:

  1. Prepare the mushrooms: In a large pot of boiling water, blanch the mushrooms for 2-3 minutes until just tender. Drain and allow the mushrooms to cool slightly.
  2. Make the marinade: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, Dijon mustard, honey, salt, and pepper. Stir in the fresh herbs.
  3. Marinate the mushrooms: In a large bowl, combine the blanched mushrooms and red onion (if using). Pour the marinade over the mushrooms and toss to coat evenly.
  4. Chill: Cover and refrigerate the salad for at least 1 hour, or overnight for the best flavor.
  5. Serve: Before serving, toss the salad once more and adjust seasoning if needed. Serve chilled or at room temperature.
