Mango Pork Stir-Fry

Ingredients:

  • 1 lb (450g) pork tenderloin, thinly sliced
  • 1 large ripe mango, peeled, pitted, and sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snap peas, trimmed
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp vegetable oil, divided
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)
  • Cooked rice, for serving

Instructions:

  1. Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey, and cornstarch mixture. Set aside.
  2. Cook the Pork: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry for 3-4 minutes until browned and cooked through. Remove the pork from the skillet and set it aside.
  3. Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the bell peppers and snap peas, and stir-fry for 2-3 minutes until they are tender but still crisp.
  4. Combine Everything: Return the cooked pork to the skillet along with the mango slices. Pour in the prepared sauce and toss everything together. Cook for another 1-2 minutes, allowing the sauce to thicken and coat all the ingredients.
