Mango Kulfi

Ingredients:

  • 2 ripe mangoes, peeled and pureed (about 1 1/2 cups of puree)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 tsp ground cardamom
  • A handful of chopped pistachios or almonds (optional, for garnish)

Instructions:

  1. Prepare the Mango Puree: Peel the mangoes, remove the flesh, and puree it in a blender or food processor until smooth. Set aside.
  2. Mix the Kulfi Base: In a large mixing bowl, combine the sweetened condensed milk, heavy cream, whole milk, and ground cardamom. Whisk until well combined and smooth.
  3. Add the Mango Puree: Stir the mango puree into the milk mixture, blending thoroughly to ensure the mixture is evenly combined.
  4. Pour and Freeze: Pour the mixture into kulfi molds, small cups, or popsicle molds. If using cups, cover them with aluminum foil and insert a wooden stick in the center. Freeze the kulfi for at least 6-8 hours, or until fully set.
  5. Serve: To unmold the kulfi, briefly run the molds under warm water. Garnish with chopped pistachios or almonds if desired, and serve immediately.
