Ingredients:

  • 1/4 cup all-purpose flour
  • 3 cups milk (whole or 2%)

  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg

For the Lasagna Filling:

  • 1 tablespoon olive oil
  • 1 lb ground chicken or turkey
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 oz) package frozen spinach, thawed and drained
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 12 lasagna noodles, cooked according to package instructions

Instructions:

  1. Prepare the Béchamel Sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes until it forms a paste and begins to bubble. Gradually pour in the milk while whisking to prevent lumps. Continue cooking, whisking constantly, until the sauce thickens and coats the back of a spoon, about 5-7 minutes. Stir in the salt, black pepper, and nutmeg. Remove from heat and set aside.
  2. Cook the Chicken Filling: In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5-6 minutes. Add the chopped onion and minced garlic, cooking until the onion is soft and translucent, about 3-4 minutes. Stir in the Italian seasoning, salt, and black pepper. Add the spinach and mix well. Remove from heat.
  3. Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, egg, and grated Parmesan cheese. Mix until smooth and set aside.
  4. Assemble the Lasagna: Preheat your oven to 375°F (190°C). Spread a thin layer of béchamel sauce on the bottom of a 9×13-inch baking dish. Lay 3 lasagna noodles over the sauce. Spread a third of the ricotta mixture over the noodles, followed by a third of the chicken and spinach mixture. Drizzle with a third of the béchamel sauce and sprinkle with a third of the mozzarella cheese. Repeat these layers two more times, finishing with a final layer of béchamel sauce and the remaining mozzarella cheese on top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  6. Cool and Serve: Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing and serving. This allows the layers to set and makes it easier to cut clean slices.
