Malasadas Dois

Malasadas Dois are a Portuguese-style doughnut that is crispy on the outside, light and fluffy on the inside, and typically rolled in sugar. These delicious fried dough balls are perfect for breakfast, dessert, or as a sweet snack. While traditional malasadas are made without filling, “Malasadas Dois” takes it a step further by incorporating a creamy filling, making each bite an indulgent treat. Malasadas Dois Recipe

Ingredients:

  • 2¼ tsp active dry yeast
  • ¼ cup warm water (110°F/45°C)
  • ½ cup sugar, divided
  • 4 large eggs
  • ½ cup evaporated milk
  • 4 tbsp butter, melted
  • 1 tsp vanilla extract
  • 4 cups all-purpose flour
  • ½ tsp salt
  • Oil for frying
  • Custard, jam, or chocolate filling (optional)
  • Extra sugar for rolling

Instructions:

  1. In a small bowl, dissolve the yeast in warm water with 1 tablespoon of sugar. Let it sit for 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the eggs, evaporated milk, melted butter, vanilla extract, the remaining sugar, and the yeast mixture.
  3. Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
  5. Once the dough has risen, punch it down and roll it out to about ½ inch thickness. Cut the dough into circles using a biscuit cutter or a glass.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the malasadas in batches, turning them occasionally, until they are golden brown on both sides, about 2-3 minutes per side.
  7. Drain the fried malasadas on paper towels, then roll them in sugar while they are still warm.
  8. For filling, use a piping bag fitted with a nozzle to inject the custard, jam, or chocolate into the center of each malasada.
