Madeira Cake

Madeira Cake is a classic British dessert known for its buttery, dense texture and slightly crisp golden crust. Traditionally enjoyed with a cup of tea, this cake is simple yet elegant, making it perfect for any occasion. Its subtly sweet flavor is enhanced by a hint of lemon zest, adding brightness to each bite. Whether served plain or with a dusting of powdered sugar, Madeira Cake is a timeless favorite that’s easy to make and a joy to eat.

Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (225g) caster sugar
  • 4 large eggs
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (60g) self-raising flour
  • Zest of 1 lemon
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (160°C). Grease and line a 9-inch loaf pan with parchment paper.
  2. Cream the butter and sugar: In a large bowl, beat the softened butter and caster sugar together until pale and fluffy. This should take about 3-5 minutes.
  3. Add the eggs: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. If the mixture looks like it’s curdling, add a tablespoon of flour.
  4. Mix in the flour: Sift the all-purpose flour and self-raising flour together. Gradually fold the flour mixture into the batter, being careful not to overmix.
  5. Add lemon zest and milk: Stir in the lemon zest, milk, and vanilla extract until well combined. The batter should be smooth and thick.
  6. Bake the cake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 60-70 minutes, or until a skewer inserted into the center comes out clean.
  7. Cool and serve: Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired, and serve with a cup of tea.
