Macaroni Pie

Ingredients:

  • 2 cups elbow macaroni
  • 2 cups grated cheddar cheese (or a blend of cheeses)
  • 1 ½ cups evaporated milk
  • 2 large eggs
  • 2 tablespoons butter
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ¼ cup breadcrumbs (optional, for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar.
  2. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  3. In a large bowl, whisk together the evaporated milk, eggs, mustard, paprika, salt, and pepper.
  4. Add the cooked macaroni to the mixture and stir in the grated cheese, reserving a little cheese for the topping. Mix until the macaroni is evenly coated in the cheesy mixture.
  5. Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheese and breadcrumbs (if using) on top.
