Macaroni Coleslaw

Ingredients:

  • 2 cups elbow macaroni, uncooked
  • 4 cups shredded coleslaw mix (cabbage and carrots)
  • 1 small red onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup celery, finely chopped
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • Salt and pepper, to taste

Instructions:

  1. Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  2. Prepare the dressing: In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and pepper until smooth and well combined.
  3. Combine the ingredients: Add the cooled macaroni, shredded coleslaw mix, red onion, green bell pepper, red bell pepper, and celery to the bowl with the dressing. Gently toss until all the ingredients are evenly coated with the dressing.
