Lomo Saltado is a popular Peruvian dish that combines stir-fried beef with onions, tomatoes, and a flavorful soy-based sauce. It’s a fusion of Peruvian and Chinese cuisine, served with both crispy French fries and steamed rice, making it hearty, flavorful, and comforting. The tender beef, savory sauce, and the contrast between the crispy fries and fluffy rice make Lomo Saltado a beloved dish in Peruvian cuisine.
Ingredients:
- 1 lb beef sirloin or tenderloin, thinly sliced into strips
- 2 tbsp vegetable oil (or olive oil)
- 1 red onion, cut into thick wedges
- 2 tomatoes, cut into wedges
- 1-2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp vinegar (red wine or white vinegar)
- 1 tbsp oyster sauce (optional, for extra umami)
- 1/4 tsp ground cumin (optional)
- Salt and pepper, to taste
- 1/2 cup beef broth (optional, for more sauce)
- 1/4 cup fresh cilantro, chopped
- 1 large potato, cut into fries (or use frozen fries for convenience)
- Cooked white rice, for serving
Instructions:
- Prepare the Fries:
- If using fresh potatoes, fry them in oil until golden and crispy, then drain on paper towels. Alternatively, bake or air fry them. If using frozen fries, cook according to package instructions. Set aside.
- Stir-fry the Beef:
- Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Season the beef with salt and pepper, then stir-fry the beef strips for 2-3 minutes until browned but still tender. Remove from the pan and set aside.
- Sauté the Vegetables:
- In the same pan, add the remaining oil. Add the onion wedges and stir-fry for 2 minutes until they start to soften but still have some crunch.
- Add the tomatoes and minced garlic, stir-frying for another 1-2 minutes until the tomatoes start to soften but hold their shape.
- Add the Sauce:
- Return the beef to the pan with the onions and tomatoes. Add the soy sauce, vinegar, oyster sauce (if using), cumin, and beef broth (if you want more sauce). Stir everything together and cook for another 1-2 minutes to combine all the flavors. Taste and adjust seasoning if needed.
- Assemble the Dish:
- Remove the stir-fry from the heat and sprinkle with fresh cilantro.
- Serve the Lomo Saltado immediately with a side of crispy French fries and cooked white rice.
Lomo Saltado is a perfect blend of savory, tangy, and slightly sweet flavors, with the tender beef and juicy vegetables complementing the crispy fries and rice. It’s a delicious, satisfying meal that’s full of Peruvian flavor!
