Lobster Soup Recipe

Ingredients:

  • 1½ lbs cooked lobster meat, chopped
  • 2 tbsp butter
  • 1 small onion, finely chopped

  • 1 celery stalk, finely diced
  • 1 carrot, peeled and diced
  • 2 tbsp all-purpose flour
  • 3 cups seafood or lobster stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Lemon wedges (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrot, and sauté for about 5 minutes until the vegetables are soft and fragrant.
  2. Stir in the flour and cook for 2-3 minutes to form a roux, making sure it doesn’t brown.
  3. Gradually add the seafood or lobster stock, whisking to avoid lumps, and bring the mixture to a simmer. Let it cook for about 10 minutes to thicken slightly.
  4. Add the white wine, heavy cream, and fresh thyme, stirring well. Simmer for another 5 minutes, allowing the flavors to meld together.
  5. Stir in the chopped lobster meat and heat through for 2-3 minutes, ensuring the lobster remains tender.
  6. Season with salt and pepper to taste. If desired, add a squeeze of lemon juice to brighten the flavors.
  7. Ladle the soup into bowls and garnish with fresh parsley.
