Ingredients:

  • 8 oz elbow macaroni
  • 2 cups cooked lobster meat, roughly chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Cook the macaroni in salted boiling water according to the package directions until al dente. Drain and set aside.
  3. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the flour and whisk to form a roux. Cook for 1-2 minutes, stirring constantly, until the mixture is golden.
  4. Gradually whisk in the milk and heavy cream, continuing to stir until the sauce thickens, about 4-5 minutes.
  5. Stir in the Dijon mustard, garlic powder, and onion powder. Add the shredded cheddar, Gruyère, and Parmesan cheese. Continue stirring until the cheeses are fully melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Fold in the cooked lobster and macaroni, stirring until well combined. Pour the mixture into the prepared baking dish.
  7. In a small bowl, mix the panko breadcrumbs with the remaining tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the top of the macaroni.
  8. Bake for 20-25 minutes, or until the topping is golden brown and the cheese sauce is bubbling.
