Instructions:

  1. In a large pot, melt the butter over medium heat. Add the onion, carrot, celery, and garlic, sautéing until softened, about 5 minutes.
  2. Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
  3. Sprinkle the flour over the vegetables and stir constantly for 2-3 minutes to create a roux.
