Loaded Potato Skins Recipe

Ingredients:

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup sour cream
  • 2 green onions, thinly sliced
  • Optional toppings: salsa, jalapeños, guacamole

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Bake the potatoes: Scrub the potatoes clean, then pierce them a few times with a fork. Rub each potato with olive oil, salt, and pepper, and place them directly on the oven rack or prepared baking sheet. Bake for 50-60 minutes, or until the potatoes are tender when pierced with a fork. Let them cool for a few minutes until you can handle them.
  3. Prepare the skins: Cut the potatoes in half lengthwise and scoop out most of the insides, leaving a thin layer of potato in each skin (save the scooped-out potato for another use, like mashed potatoes!).
  4. Crisp the potato skins: Brush the insides of the potato skins with a little olive oil and sprinkle with salt and pepper. Place them back on the baking sheet, cut side down, and bake for another 10 minutes, then flip them over and bake for an additional 5-10 minutes until the edges are crispy.
  5. Add the toppings: Remove the potato skins from the oven and sprinkle the insides with shredded cheddar cheese and crumbled bacon. Return them to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  6. Garnish and serve: Remove the potato skins from the oven and top with sour cream and sliced green onions. Add any additional toppings you like, such as salsa or guacamole.
