Ingredients:

For the Base:

  • 1 (32 oz) bag frozen tater tots

  • 1 tbsp olive oil

For the Beef Topping:

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/4 cup water

Cheese Sauce (optional, or use shredded cheese):

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup milk

  • 1 1/2 cups shredded cheddar cheese

  • Salt and pepper to taste

Toppings (suggestions):

  • Sour cream

  • Sliced green onions

  • Pickled jalapeños

  • Diced tomatoes or pico de gallo

  • Guacamole or diced avocado

  • Chopped cilantro

Instructions:

  1. Bake the Tater Tots
Preheat the oven to 425°F (220°C). Spread the tater tots on a baking sheet in a single layer. Drizzle with olive oil and bake for 25–30 minutes, flipping halfway through, until golden and crispy.

  2. Prepare the Beef Mixture
While the tots are baking, heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Add chopped onion and garlic, cooking until softened (about 3–4 minutes). Stir in taco seasoning and water. Simmer for 3–5 minutes until thickened. Set aside.

  3. Make the Cheese Sauce (if using)
In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and bring to a gentle simmer. Stir constantly until thickened, then add shredded cheese. Stir until smooth. Season with salt and pepper.

  4. Assemble the Totchos
Arrange the crispy tots on a large serving platter or skillet. Spoon the beef mixture evenly over the tots. Pour warm cheese sauce over the top (or sprinkle shredded cheese and briefly broil to melt).

  5. Add Your Favorite Toppings
Finish with sour cream, green onions, jalapeños, tomatoes, avocado, and cilantro—whatever you love on nachos!

Tips:

  • For extra crispiness, air-fry the tater tots if you have an air fryer.

  • Swap ground beef with ground turkey, chicken, or a meatless crumble for a variation.

  • Add black beans, corn, or olives for more flavor and texture.

Enjoy these Totchos fresh and hot, and prepare for them to disappear quickly!
