Lemon Ricotta Cookies

Directions:

  1. Prepare the dough:
    • In a medium bowl, combine the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat together the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
    • Mix in the ricotta cheese, lemon juice, and lemon zest until well combined. Gradually add the flour mixture, stirring until just incorporated.
  2. Chill the dough:
    • Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours to firm up. This makes the sticky dough easier to handle.
  3. Bake the cookies:
    • Preheat your oven to 375 degrees F (190 degrees C) and line baking sheets with parchment paper.
    • Drop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
