  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the cups lightly.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, poppy seeds, baking powder, baking soda, and salt.
  3. Prepare wet ingredients: In a medium bowl, whisk together the melted butter, eggs, yogurt, lemon juice, lemon zest, and vanilla extract until smooth.
