Lemon Ginger Cookies

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar (plus extra for rolling)
  • 1/4 cup brown sugar
  • 1 large egg

  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, ground ginger, and lemon zest. Set aside.
  3. Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
