  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated parmesan cheese (optional, for garnish)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain, reserving 1/2 cup of pasta water. Set aside.
  2. Prepare the Shrimp: While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the pan and cook for 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and red pepper flakes (if using) to the pan and sauté for 1-2 minutes until fragrant. Add the white wine (or chicken broth), lemon juice, and lemon zest, scraping up any bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes until slightly reduced.
  4. Combine Pasta and Shrimp: Add the butter to the skillet, stirring until melted and the sauce becomes smooth. Return the cooked shrimp to the pan, then add the drained pasta, tossing to coat everything in the sauce. If the sauce seems too thick, add a little reserved pasta water to loosen it up.
  5. Finish and Serve: Stir in the chopped parsley and adjust seasoning with salt and pepper as needed. Divide the pasta and shrimp into serving bowls, and top with grated parmesan cheese, if desired. Serve immediately with extra lemon wedges on the side for a burst of freshness.
